The raw material
The basic raw material, i.e. the cow’s, sheep’s, and goat’s milk used to make Graviera, comes exclusively from cattle, sheep, and goats grazing and rearing on the lush pastures of Naxos.
The staple diet of these animals is the typical Mediterranean vegetation of the fertile land of Naxos.
The staple diet of these animals, the typical Mediterranean vegetation native to the traditionally fertile pasture land of Naxos, drenched by sea salt, “shone on” by the hot Greek sun and blown by the Cycladic Meltemi winds, gives the milk a distinctive character which in turn is expressed in the wonderful taste of Graviera Naxou (PDO).
